Tonight we are having some real comfort food. It’s overcast tonight and a chill in the air so it feels so good to sit down to “White Bean Soup & Cornbread”. My Mom made this so often when I was a kid. Its like a big hug from her when I eat it.

I Love cornbread . My Mom is from the south .Making corn bread is an art. You have to use a cast iron pan. You need to heat the pan with a tablespoon or so of oil to 400 degrees. When you pour your batter in the very hot pan it puffs up and starts cooking. Back in the oven untill browned on top. This techique will give you a very crispy, nutty crust. Yum! Oh , If you have little ones (or you eat like one) Don’t forget the honey.

I like to serve old style table pickles on the side the sweet acidic taste of the pickles really brings out all the flavors of this meal .

WOW! Daddy bought Mommy a new camera. I am so excited! This is my first digital SLR. I always used a pentax “oldschool” SLR and LOVED it. Since the digital age has come I have been a bit defiante. Thats all over now.

I am now a believer. With this Nikon D60. I am going to photograph the world.
